This year for Thanksgiving, I want to have a theme that is very simple. Instead of sweet potato casserole, I would like to cook whole sweet potatoes. Simple potato, with maybe a sauce or just a chunk of sweet creme or butter.

Does anyone have any recipes that would go with this theme. Vegetables that you have tried with the "earthy" taste.
Any suggestions on to cook various veggies to get that "outdoorsy" taste going, or bringing out the taste of the whole vegetable. Not sure why I'm feeling this trend, but I like the simple.

Interesting concept. I would think some greens or Brussels sprouts would go hand in hand with that theme.

The last couple of years we have had only veggies that I have grown or put up as sides with the traditional turkey and dressing that is homemade.

Roasted root vegetables (Sweet potatoes, onion, carrots, celery, maybe even some apples) and a seasoned pork tenderloin cooked all together in the oven in a big cast iron skillet. Like Maggie said do Brussels sprouts with it you can roast them in the oven too with Sriracha and honey.

A homemade cranberry sauce would go good with the pork too. You could even throw crazins in with all the vegetables put pecans in there too.
