Mdees OP 8 point M Joined: Apr 2013 Posts: 2,033 Mobile, AL	I want to try my hand at boudin this season. I'll need some hog liver to go with the meat. I've never been much of a fan of organ meats so I have generally discarded the offal or given what wasn't bloodshot to the dogs. Do any of you regular hog killers keep and cook the organ meats? Liver in particular? I understand that it must be cooked thoroughly to at least 160deg but are there concerns with feral hogs that aren't a concern with commercially raised swine? Thank you for any input.

That being a wild animal they eat the same things as deer, and I eat the deer liver out of most deer, so i think it would be safe. 2. I have no idea what type of bacteria a pig filters through it's liver, so i would not risk it. Final answer. Unless I saw an article from a reputable author, Id stay away.
