The quickest-maturing fall vegetables only need about 30 days to yield a crop. They include broccoli, chives, bunching onions, spinach and leaf lettuces. Thirty days before the first heavy frost is the time to plant cover crops intended for green manure.

The first plants to plant for a fall garden include beets, globe onions, carrots, cabbages and Brussel sprouts. Parsnips, rutabagas, cauliflower and fava beans are also options. All these plants need about 90 days to mature. Carrots and parsnips can stay in the ground after maturity, and parsnips usually taste better after at least one heavy frost.

The second group for fall planting includes early varieties of carrots and cabbages, leeks, collards, turnips, and Swiss chard. These plants need about 60 days to mature. Perennial herbs and flowers are also good choices for planting at this time.

Happy planting...

My favorite fall crops are cabbage, onions, carrots, lettuce and greens. Love to grow spinach too but that is a gout trigger for my hubby, so I don't grow it any longer. If I can find brussels sprouts, I will plant those too but usually have a harder time finding those.

With all that said...I am not planting anything for a fall crop since I want to revamp all my raised beds this year. Going to use the down time to rework beds.

I want to plant a small patch of turnip greens mixed with mustard greens. Cool mornings picking turnip greens wearing a flannel shirt makes me smile.

Well, I lied. Wound up planting green and red cabbage, Brussels sprouts, broccoli and mustard greens. Seems my heart over ruled what mind was thinking.

I plant turnips and mustard mixed on my entire garden eat all I want and plow the rest under next spring.

My fall garden is really a late summer garden - which means most of the same stuff I planted in the summer planted late until a frost.

But I'll pass along some advice... my Mom is 80 + years old, a grew up on a small farm chopping, hoeing an picking cotton. She grows her own lettuce in the winter, and plants it in stages. A lot of that lettuce ignores freezes, and just keeps putting on.

I planted some additional red sail lettuce and onions today...seems that dirt just calls my name...I cannot help myself...I have to dig and plant!
