Never done one myself. Read about them a ton. What temp are you using and how long are you planning to smoke it?

Did you trim the fat cap at all and did you place it with the fat up or down?

I tried one years ago and it turned out a bit tough. I need to try it again since I've gotten more familiar with my BGE. They are excellent eating when cooked correctly.

My brother does a great brisket. Not sure the weight he buys but usually he says he cooks them 10-12 hours. Very tender and great smoky flavor

Never tried brisket on the bge, I've got a whole one untrimmed 5.5 lbs. I plan on trimming the fat cap to an 1/8"

It's hard to regulate below 250 without constant monitoring so I'll go there. thinking I will indirect cook with drip pan. Placing fat cap down. Cook to 190 however long that takes. Wrap and place in cooler for a couple hours. Any good grillers out there I'm open to other idea's
