A casserole dish of enchiladas de pollos y chilies Verde (Green chili chicken enchiladas) ready and in the frig for tomorrow. Another casserole dish ready and in the freezer for another day. Then because I had some extra stuff from last time, I threw together a small batch of cheese and onion enchiladas to go with supper. I had some extra chicken, cheese, onion, and green chilies stuffing that I was thinking on what to do with it and decided it will make a killer omelet.
BTW, for those familiar with Southwest cooking, I used Hatch chilies for the green chilies. For those not familiar with that cooking, a chili grown in Hatch, New Mexico is vastly superior to any other green chili you can get. They have more flavor and a better flavor and are naturally hotter than other green chilies.
