I wouldn't run aluminum. I would run #2 thhn copper for the 100 amp and #8 thhn for the 50 amp. Why no aluminum

You will be fine using aluminum, I would go with the 2/0 due to the distance and voltage drop.
I think you can get by with a #4 aluminum on the 50A service. #2 would be over kill since it is rated for 90A ^^^^ 2/0 aluminum gives you about 2.08% voltage drop at the end of a single phase 100 amp run of 230 ft. 4 AWG aluminum gives you a 1.44% voltage drop at the end of your single phase 50 amp run of 120 ft.

Will that big aluminum wire connect in a sub panel? I think your biggest trouble will be terminating that 3" conduit in that 100amp panel.

If not step down to 1 1/2" for the 50A run and 2" for the 100A run. Keep in mind on most of this aluminum you can get it direct burial, so you don't need conduit. Price wise you should be looking around: 2/0-2/0-2/0-1: $2.00 per ft 4-4-4: $.70 per ft
