I assume by St. Louis you mean spare rib vs a baby back rib? If so I prefer a spare rib when I'm smoking my own. St. Louis is a slightly trimmed spare so yea. I'm trying to find that one go to rib, but I love both lol

Don't matter to me. I can make both fall off the bone  You and everyone else who overlooks ribs. I have never understood the fall off the bone BBQ infatuation. If you cook any meat long enough it will fall off the bone.

If you cook any meat long enough it will fall off the bone. Let's not start with that chit already. It's a personal preference. I don't want to have to fight the damn bone for the meat, and I prefer mine pretty much fall off the bone tender. Chewy meat doesn't make a whole lot of sense to me.
