Since I've been trying to eat better and lose weight, I have made adjustments to my old diet. This is a great recipe that's full of flavor and very satisfying. Marinade thin sliced top sirloin, eye of round or other cuts in olive oil, splash of vinegar, kosher salt, garlic and carne asada seasonings or make your own southwest flavor (cumin, chili powder, cilantro, black pepper, smoked paprika). Marinade for 2-4 hours minimum. Slice white onions and bell peppers, toss in olive oil and cumin. Grill veggies on cast iron grill/griddle or on your grill. Remove and keep warm Sear steaks over high heat to sear fast for 1-2 minutes each side or however you like it. Remove to rest. Grill fresh jalapeno halves on high heat letting steak juices smoke the peppers. For low carb platter: Make bed of grilled onions and peppers on plate. Top with sliced steak Top with Mexican shredded cheese Top with fresh salsa or pico de gallo Top with dollop of sour cream and guacamole Serve grilled jalapeno on the side (For a little more substance, add in some black beans if you wish) Really hits the spot
