I use brown and white sugar, but not a lot. The coarser grained the better.

Brown sugar in the rub, spray with apple juice concentrate throughout first half of smoke. Then cover in honey before wrapping with foil for last half of cook. I like sweet rubs, with almost no spice. Just brown sugar, paprika, garlic onion powder and a fee more things. But very little heat gor me.

Save the sugar for the Beef Brisket. See... I do just the opposite. No sugar anything for beef. Only spices and acids like lime, lemon or vinegar. Sweet stuff with pork like apples and kraut with sausages, honey or cherry on ham, apples, sweet potatoes with pork chops, etc... Beef no sweet stuff.

Brown sugar here, as well. I always brine mine in my on concoction for about 24 hrs, then add the rub for a few hours and cook. Juicy,Juicy,juicy with great flavor. A lot of butts i taste really don't have good flavor, kinda smokey and bland.

I had forgotten about the cocoa powder trick. Did it once years ago and liked it and never thought about it again.
