I have never used them but just bought a kayak and was toying with the idea of rigging one up on it. How much does it help by increasing the odds? Is it a game changer when it comes to putting fish in the boat?

If you've never used one, I wouldn't start now. "Fish finders" can be the downfall of instinctual fishing. Really if you are in a kayak you would do better with water temp and water clarity. You can do one with the naked eye. The other can be had with simple tools. If you are beating shallow water, you likely won't need to spot fish.

You need a degree to be able to use some of these new units. My buddy i fish with bought a helix 7 or 9 and neither one of us can figure out how to fine tune it. I enjoy fishing out of my kayak because its so simple amd relaxing
We will burn that bridge when we get there

Installer is going with me to smith Saturday to tune/troubleshoot because it's not that easy anymore.

Go throw a topwater early then idle around fooling with the helix get frustrated pick up a flipping stick and go beat the banks

Really depends on what kind of fishing you do. I'm really liking the video game fishing. Nothing like finding a wad of fish or a single fish and then watching your bait fall through the water column to it and then watching the fish hit it.
If you drop shot or do anything else off shore you need a fish finder with gps. If you beat the banks, gps is useful fishfinder not so much.

Glad it's not just me. I have the Helix 5 and I still don't have it set it up right. Try getting three up and running with interference and a $350 transducer that's likely defective from humminbird

I just put a Humminbird Piranhamax 197c DI on my kayak. Got it on sale at Cabelas for $99. Tried it out the other day for the first time on a small lake up here. It worked pretty well for the few hours I used it. It's pretty basic so don't have a lot of settings to fool with which made it easy to setup

Glad it's not just me. I have the Helix 5 and I still don't have it set it up right. I put a Helix 7 SI on my boat and 2nd time out my outboard quit and I've been too lazy to get it going. Maybe this week. I really liked the unit and especially the SI views I got the 2 times I took it out though.
I firmly believe that a double gallows should be constructed on the East Lawn of The White House. Politicians who willfully and shamelessly violate their oath to uphold and defend the Constitution of the United States of America should be swiftly tried and, upon conviction, publicly hanged at sunup the day after conviction. If multiple convicts are to be hanged they can choose with whom to share the gallows or names shall be drawn from the hangman's hat to be hanged 2 at a time.

I haven't had a chance to use any of the new birds yet, but my 999's are as easy as can be. I just wish I would have went with 1199's originally. I just had to talk myself out of it. I had a 999 on the bow of my last ranger. I loved it.
