Irishguy Jr's girlfriend and another one of his friends that we dearly love, Victoria, were going to a play tonight [His girlfriend is majoring in English and Theater, so...  ], so we made a homemade taco pie. We used grass fed beef, onions, 3 kinds of peppers, fresh garlic, oregano, salt, pepper, cumin and chili powder. We let that simmer until the veggies were tender and then added an 8oz can of tomato sauce, a 16oz can of black beans, a 16oz can of shoe peg corn drained. Then simmered that for a while and then topped with cheddar and then cornmeal mix, buttermilk, egg, and oil Bake that in a 350 oven until the top gets brown... good stuff.

Love taco pie. You need to tell Jr to find a woman that's not studying that liberal hippie stuff lol. She is a sweetheart, Irish Catholic, conservative as they come... Hahaha... She likes everything I cook except for Tomatoes... The Devil's food.
