Friday night I made some gumbo. I had a little fresh corn left from last year so I decided to throw it in. It turned out good. The leftovers are for lunch today.

I also made some homemade pimento cheese and had a simple grilled cheese and some chips for lunch yesterday.

I LOVE homemade pimento cheese! I make an enormous batch of it everytime I come home, and that's usually my lunch everyday when I come in from whatever I'm doing around the house. I usually make batches of about 5# or more. hmmm...I should note that I'm not the only one that eats it!... laugh

Pimento cheese is hard to beat. I started using grilled red bell pepper and jalapeno in mine. If you haven't tried it. You need to.

I'll have to try those. I do add some ground red pepper to the mix.

Agree. I like equal parts of fresh green jalapeno not pickled, and pimento from the jar. Fresh grated red wax hoop cheese, duke's mayo, a little Worcestershire sauce, a lot of Crystal hot sauce, some cayenne pepper and course ground black pepper. Make it at least a day ahead of when you are going to eat it. Sometimes I add chopped pecans for some crunch.

All those variations sound good!! Wish I had some right now!!

Sometimes I just make it straight up pimento & cheese but other times I like to kick it up a notch or two with fresh jalapeno and spices. I have never tried the grilled red pepper but that sounds yummy!!

I am all with you on the Duke's mayo too!!!! About dang time to make a batch.
