Been having to eat out the past few nights but finally got a chance to cook some grouper fillets I picked up at Fresh Market.
Pan seared the seasoned fillets in olive oil and butter. Then drizzled them with lemon butter/white wine and cream sauce with capers on top of a bed of sauteed fresh spinach with garlic. For an extra side, I made some cauliflower flat cakes. Only problem was that I could have eaten two plates instead of one.

Cauliflower cakes.

One bag cauliflower crumbles cooked.

Purée with 1/4 cup milk and 2TBSP butter. Add about 1/2 cup to 3/4 cup of pancake mix and stir to make better.

Pour small amount of batter onto hot griddle with olive oil. Cook just like a pancake until lightly browned on each side.
