This is actually pretty darn easy to make and it is mighty fine with some crusty French bread...
Take a pound of Italian sausage and cut it out of the casings. I used hot Italian sausage, but you can use sweet and add some red pepper flakes if you want.
Throw that in a pot with a little olive oil and use a potato masher to mash it all up while it's browning. Also take some kitchen shears and cut up a few pieces of bacon into small pieces and throw that in there too.
While all that's browning, dice up an onion and a couple of fresh cloves of garlic and throw that in there after the meat browns.
Add a teaspoon of salt and a teaspoon of pepper, and a tablespoon of Italian seasoning and a tablespoon of dried parsley.
Once you've stirred all that around and the onion starts to get a little tender pour in a box of chicken broth and a quart of water.
Scrub about 6 small potatoes and quarter them up and then cut into 1/4" slices. Throw all that in there.
Once it starts to bubble, turn it on low and let it simmer until the potatoes get tender. Now grab a few big handfuls of chopped, fresh kale and throw that in there and let that simmer for just a few minutes, you want the kale tender, but you still want it to have some texture.
Next get that little carton of whole whipping cream and pour about half of it in there that will be about one cup. Stirring while you do this. Let it simmer for a few more minutes. Taste it and see if it needs more salt or pepper or anything. And say to yourself, "Damn, this stuff is good."
Warm, toast or grill you some crusty French bread with some butter and serve all that stuff up with a nice red wine.
