Does anyone have a way to cook a great Prime Rib? I usually just put salt, pepper, and some kind of steak rub on it. This turns out great but I was just looking for something different.

Try this for a rub:

Lightly olive oil the roast and then use kosher salt, course black pepper, white pepper, minced garlic, thyme, and rosemary.

Penzeys makes an English Prime Rib Rub that is outstanding. If you have a BGE, I highly recommend doing a reverse sear for this cut of meat. Meaning: smoke it at 225 until about 5-10 of your target internal temp, pull it off and rest it while you ramp the BGE up to 500-600 degrees. Put the roast back on for 5 mins or so until it's crispy on the outside.

I only put salt, pepper, and granulated garlic on mine, preheat the oven to 500 put the roast in the oven, then turn the temp down to 300 and cook to desired internal temp.

Low temp is key to getting a good medium rare roast that is not overcooked around the outside. 200 - 225 deg until within 5 degrees of desired doneness and then broil it for a couple of minutes for a crisp outside. It will be light red almost to the edge with this method.

I rub mine with garlic and herb butter, bake at 500 for 5 minutes per pound, turn off the oven and let it cruise til it reaches desires internal temp.
