I had some visitors this weekend who brought a few pounds of fresh shrimp. We had roughly a pound left last night and I used them in a recipe I'd seen on Diners, Drive-ins, and Dives. The name comes from Joey-K's restaurant on Magazine Street in New Orleans. Dredge your peeled and deveined shrimp in flour, salt, pepper, and garlic powder mixture. Sauté in large skillet with 1 melted stick of butter. Don't overcook shrimp or it gets rubbery. Add 1c of artichoke hearts and 1/2c of diced ham and 2 cloves of minced garlic. Add 1/3c white wine, 2tbsp Worcestershire, and a sprinkle of garlic powder, salt, & pepper. Garnish with 2tbsp chiffonade basil, 3tbsp green onions, and serve over angel hair pasta and sprinkle with Parmesan cheese. Served with olive oil brushed green beans baked in the oven.
