Well, that title is a bit misleading....there are actually no deer balls involved in the making of this dish but that is what we have always called em and everybody that eats um loves um!!! Ingredients: venison tenderloin cut into bite size pieces bacon [cut slices in half] jalapeno pepper slices sliced water chestnuts you will need toothpicks to put it all together First, you cut your tenderloin into bite size pieces and marinate in your favorite marinate over night. Once your meat has marinated, you prepare your station to put together the deer balls!! Now, assemble...half slice bacon, vinison tenderloin bite,water chestnut and jalapeno, roll in bacon and secure with toothpick. Repeat until all are put together... Put those babies on a good hot grill and once the bacon is done, they are ready!!! For those who like oysters, throwing a good ole oyster into the roll-up is freaking awesome too!! These are great at a gathering or party!! Enjoy!!! Deer balls rock!!!!!!!

What does the grill do to the texture of the bananas?
Get mushy? Crunchy? I guess they're hot by the time you bite in? Sugah, put yo glasses on and try reading again. No bananas involved.

Ima try this version. A buddy of mine does the same thing but he uses a sliver of onion and a sliver of bell pepper in lieu of your water chestnut and jalapeņo. I suspect I'll like your version better.

I suspect I'll like your version better. Lemme know what you think...that jalapeno gives it just a small bite and the water chestnut just a pop of crunch...works well together. I could eat my weight in them!!

I've just never thought any of them were to die for. Well , what I prefer might be poo-pooed here. I use Coca Cola and Stubbs Marinade for beef. A can of coke and a bottle of Stubbs. To that I add spices we love ....generally Adolph's unseasoned tenderizer, pepper and garlic powder (not salt). I drain my meat of all marinade and then salt and pepper to taste when I assemble. I splash the marinade on the deer balls as they cook. I use fresh fracked black pepper and corse ground sea salt. I totally agree with you on the marinades.....most are way to salty for me. The coke cuts that and helps break down the fibers in the meat but you don't get that coke taste.

True dat. I never thought of using Coke in a marinade but one of the easiest recipes I do is cooking a ham in a crock pot with nothing more than a regular Coca-Cola poured over it. I'll try it. Thanks.

I do an asian version with waterchesnuts and marinate the meat in sesame oil, soy sauce and vodka (or sake if you have it) for a few hours. Great variation.
