kinda what I discovered, if doing steaks like I will tonight I'll clean the ashes out if I'm smoking or cooking chicken I'll leave most of the ashes in and cook around 450. 750 seems about right for thick cut steaks, a coupe of minutes on each side.

You did burp it before openiing the lid at those high temps didn't you, had a friend open mine up last year without burpping it, he lost some eyebrows laugh
