I have an elderly neighbor that has his birthday celebration every first Saturday of December, his 81st birthday was a couple of days ago. He is cooking a bunch of Boston butts tonight and a lot of people will bring stuff to eat. He has a big shed with tables, heaters and an inside 10 foot gas fired cane syrup evaporator. He raises a bunch of cane and anybody that wants to bring cane they just throw it in the big pile. I went over today and they were starting to cook off the first batch, I don't really like cane syrup, but people go crazy for it. He gives a half pint or so to anybody that wants it, and we made about 16 gallons of syrup today. Most of it will be made tomorrow..

oh man, i think i was bottle fed cane syrup. grew up on it and had a uncle (by marriage from clarke county)that loved it too. he wasn't rich but he wasn't dirt poor - didn't take any help from anyone (no subsidies back then). he would make cane syrup-peanut candy. boiled the syrup on the stove for forty forevers and put peanuts in it. i don't know if they were green or if he roasted/parched them. he would pour it onto buttered tin foil and when it cooled, he would roll it up and keep it in the fridge-a-dair.

i also love to put cane syrup in a small bowl with a little dab of sweet cream butter. stir it up with a fork and dip a hot biscuit in it. fine, fine, fine. goes well with sausage and eggs and a cold glass of sweet milk thumbup.

Its too sweet for me, but when we have men's breakfast at church, there's always a tub of it heating up above the stove. About a quart a month.
