What's the deal with seeing a NY strip or ribeye for like $4.88/lb? Are these old milk cows that they slaughter? One time I got some T bones for $2.99/lb and they were tougher than shoe leather. What's the deal?

If they are listed as Choice or above then buy them if it just say's U.S.D.A. inspected.....run, I got lucky and bought some T-bones for $2.99 a pound a few years back and they were great we ate T-bone twice a week for months....

From canner grade all the way up to prime, you generally can determine what it's gonna taste and feel like. On the other hand, you can make some fine steaks out of what Winn-Dixie sells as choice cuts.

Look for good marbling and dry age them in the refrigerator for several days using instructions found online. Watch your temp and moisture. Even with that, if a side of beef has been stressed before slaughter and if it hasn't at least hung through the process of rigor mortis, the lactic acid can't go to work breaking down the meat.

Irishguy posted once about dry aging his stuff. I'm no expert, but I know how to handle venison pretty well. Maybe he can weigh in.

I thought I was getting a good deal once buying a whole untrimmed ribeye for what I thought was a steal. It had not been trimmed at that price, so I bought a bunch of unneeded fat in the deal at premium prices. If you buy a whole ribeye, ask what the trimmed price will be.

I must say, I posted about Winn Dixie having some ribeyes for super cheap a few weeks back. After eating a few they were tough as nails. Prolly some of that Brazilian imported junk. I was very disappointed.

Having said that, I have gotten some great meat from Winn Dixie on sale but have noticed over the past year their quality of beef has been degrading. It started with the "harvested in Australia" ribeyes they started getting about a year ago and they were always on sale for like $7.99/lb boneless. They weren't terrible, very tender just not that usual beef flavor I like. Then they got this new stuff and it's junk!

Most of the time when you get cheap prices from a reputable grocer then it means the meat has been warehoused too long beyond that grocers guidelines.That is most of the time but not all.The reputable processors have a 14 day aging period prior to shipping out to the grocers warehouses.We only buy from Excel,IBP and Sterling Silver which is our premium line.Beef is at a 2 year low right now and it has driven prices down so I wouldn't be surprised to see ribeyes at 6.99,strips 4.99-5.99,t-bones same as strips and sirloin as low as 3.99.I have strips for 5.99 this week and ground beef for 1.58 and am still making a little bit of money.We have a 2 week time limit from the time it comes to our warehouse to move the product after that the prices drop.With that said you can still get good meat even if it is only usda inspected .You have just got to learn about marbling.Marbling and aging are the key factors in good steak.IMO salt is an enemy if it is used any other time than at the time of putting it on a grill.Salt if left too long will pull the moisture out of the meat and toughen the red meat with little to no affect on the fat.I can not speak to the foreign meats because I have never in 35 years had any dealings with them other than goat but I will say this.America is a carnivorous country and we have stronger guidelines than other countries on all of our meats so I would stay clear of anything grown outside the U.S.I hope this helped.

I will add this also.Your grocer is required by law to inform you in some way where all class A foods come from.So if you look around you will find the country of origin posted somewhere for meats,seafood,produce and dairy.If you ask and they tell you anything other than the truth then they take a large chance of penalty.
