I've always fried the small ones we catch saltwater fishing.

Cut the bloodline out and slow smoke it. It's as good as smoked mullet. You can't hot smoke it quickly though.

Cut out the blood line and fry it. It helps if you gash it around the tail as soon as you catch it and let it bleed out. I actually like the taste of them.

As far as stingrays go, fillet off the thick side of the wings, then fillet off the skin. Cut it up into smaller pieces, dip it in a seasoned egg wash, drop it in some flour and fry it up. I've done it this way three times and the family loved it three times.

X2 I always cut the tail off as so as I catch it. Never eaten one past a day old either.

Bake the fillets in the oven at 350 degrees laying directly on top of a one foot section of 2x4. Take them out and baste them with butter every 5 minutes. After 30 minutes take the whole thing out, rake the bluefish into the trash can and eat the 2x4.

We have used it in fish stew and it's good. We usually throw them back though.

spruce is better than treated, that treated wood will give you the runs.
