Ok, based on your personal experience, what percentage of the time would you say a deer will jump string on shots over 25 yds? Do you shoot true or low anticipating the jump?

There's no hard and fast rule to it. Deer that get hunted a lot seem to be jumpier to me and on super calm days they seem to react more. But that's just personal experience

Ok, heart shot it is. I guess if I'm true to my aim point and they jump maybe I still hit a lung?

Yep, that way if they do duck down they still get hit in the lungs.
Last year was my first year bow hunting, I missed 3 times and killed 3, of the 3 that I missed only 1 was because it ducked. On one of the misses, I was able to get another shot on him after he went about 20yds and came back to my plot. It wasn't until the end of the season though that I really learned about shooting for the heart after I had an Albino spotted doe duck my shot.

I think a lot has to do with them being spooked. If they don't know you're there then you should be fine.
