Irish.....how have you found the thermometer on the akorn? accurate? Everyone on all these kamado forums seems to use these fancy electronic thermometers. Is the built-in one pretty decent?

I've never had a grill with even a remotely decent thermometer, but then I've always had <$100 gas grills.

It allows you to see the temp without opening the smoker to probe it and losing heat.

Good deal....before I buy a new one, I've been searching FB and CL for used ones, just in case. Missed out on one for $100. Gonna look a little more and if one doesn't pop up soon, I'll just break down and buy a new one.

The Akorn thermometer on mine is fairly accurate. I actually use it to keep up with the general temp of the grill, but I use a remote electric probe to keep up with the internal temp of the meat.
That butt was cooked to 200 degrees and turned out great. mine stalled out last weekend, I never could get internal temp to 200. I ended up taking it off grill after 15 hours (9lbs @ 225 degrees) with internal temp holding stead at 185 for over 2 final hours. Wrapped it in foil, beach towels and put in yeti. Pulled the meat about 4 hours later when ready to serve. Was best bbq ive ever had. [img:center] [/img]

Ditto to blumsden. I tried a molasses brine a while back and that has become my go-to for a good butt.
Dissolve half a jar of lasses and a cup of salt in about 8 cups of water. Add peppercorns, minced garlic, whatever. Then let the butt brine in an XL ziplok bag for 24hrs prior to your cook. After that, dry rub or not. Follow normal cooking procedures, sans the oven. Straight to foil when internal temp hits 180, wrapped in towels and into the cooler for a couple hours. Mmm mmm good.
If there's any doubt, then there is no doubt... The gut don't never lie.

Looks good though. 185 internal temp ain't bad.

This was mine a couple of weekends ago during the Barber Vintage Festival. Some motorcycle buds came into town and Mrs. Irish and I had to whip up some food... 200 internal temp. 250 for about 7 hours. Got to watch Alabama smite Arkansas.
