Squirrel boil till tender. Then pretty much whatever i like battering and pan fry mine or dumplings. Rabbit batter and pan fry.

Cook squirrels about like pot roast. stuff them with whatever you like, season all over, put in dutch oven and cook at 275 for 3-5 hours. Meat should be falling off the bones when done.

We boil squirrels until it almost falls off the bone.Make dressing with cornbread,onions,celery and the broth.Pick squirrel meat off the bones and stir it in the dressing.Bake in the oven.Mighty tasty.

Rabbits we salt, pepper & batter and slow pan fry or put on a smoker with a dry rub.

I make a dish that is along the same lines as red beans and rice, but I use rabbit and white beans. It also has sausage, onions and peppers, garlic and cajun seasoning. I serve it over rice.

The last rabbits I cooked, I cooked them on the BGE. Low and slow. I laid them on their back and draped bacon over the loins and back legs. Brushed on a little BBQ sauce right before taking off. They were awesome.

Batter up your rabbit and fry like pork chops, make a crock pot half full of country gravy and drop your fried rabbit into said crock pot. While thats cooking make a pan of homemade biscuits. Cook until rabbit is falling apart. Thank the good Lord, eat, and enjoy.
