Whew boy it's hard to improve on mommas cornbread recipe but everything's better cooked on the egg. Turned out with a nice crispy crust.

That does look good. I've got another one for you. Next time you make mashed potatoes, make more than you need. Put the leftovers in a bread pan and put it in the fridge overnight. This will cause it to get stiff and you'll have a "loaf" of mashed potatoes. Easily turn the loaf upside down onto a cooking plank that has been soaked (I like cedar). Dot with butter and place on the egg with a few damp wood chips. You just want to warm the potatoes and let them absorb a little smoke flavor. Sprinkle with cheese a minute or two before you remove it.

Try a pan of chicken and dressing sometime. Also, try some of the boxed scallop potatoes (follow the oven directions).

Yes, with the plate setter. I cooked this around 425 for the first 20 minutes then up closer to 500 for the last few. It took nearly 30 minutes to cook in the BGE, and next time I will probably try cooking it closer to 500 the whole time. It got a little dried out. Maybe faster cooking would help keep it more moist.
