Trying my hand at making Summer Sausage. I made 5 lbs. and waiting on it to reach 165 deg. I used the Back Woods summer sausage kit. I added jalapenos and pepper jack cheese so I hope it's good. Anyone else ever made any????

Not yet. I'm going to grind one Boston butt with my deer meat then season with leggs summer sausage seasoning. When I get around to it. Got to get some deer meat first

I made 22 lbs last weekend. 10lbs in the bge and 12 lbs in the oven. It's easy and good.

We cooks ours at 340 degrees for 40 minutes turn a third 40 more minutes,turn a third for another 40 minutes and they always turn out good. We put onions,green peppers and jalepenos in ours

Think I cooked mine too long. I put it in oven at a temp of 180 deg. Inserted a temp probe and waited on it to get to 165deg. After 12 hours the temp probe was only at 150. Plus my oven automatically shut off sometime after this. I raised temp on oven to 190 and when temp probe reached 160 deg ai took them out and placed in fridge. They taste good but they shriveled up to about 1.5" in diameter. Before putting inoven they looked like the pic above.

My cook time was about 3 hrs on bge at 200 about 5 hrs at 180 in oven

2 hours at 340 turn every 40 cant go wrong and its a lot faster

Yeah and I didn't add any fat. I just used 5 lbs of venison. Don't know what I was thinking. It's an edible lean snack I guess. Next time my mix will be 3.5 lbs of venison and 1.5 lbs of bacon fat. Never know until you try.
