I have cooked a slab of baby backs, a slab of spare ribs, half a pork loin, 15 lb turkey, whole chicken, ribeyes and stuffed pork chops on the Primo in the last two weeks. Going to try the jalapeño bombs this weekend. Give me some of your favorite dishes please. Trying to cook/smoke on sunday after church each week to have meals for the week. Thanks in advance.

Your Primo won't be truly broken in until you've cooked a couple of staples on it:
1. Hamburgers
2. Boston Butt

Roll a deer hindquarter and wild hog hindquarter up together and put it on your smoker. Very good stuff.

In addition to what you have mentioned, I like doing tomatoes also.

Take a plum tomato and cut it long ways. Take out the pulp. Sprinkle a dash of cayenne in each half, then put a piece of pre cooked conecuh sausage in it. Then sprinkle some shredded parmesan cheese on top and maybe dust with some Tony's. Cook until cheese melts. Slap yo mama good.

Try some chicken wings.

I like to soak some chicken wings for a couple days in a zip lock bag with hot sauce. Throw on the Primo on the indirect side, season a little and cook until done and then move them over the coals to crisp the skin.

take a fig, split lengthwise, stuff with blue cheese, wrap with prosciutto or thin bacon and grill. I start doing these as soon as our figs get ready and do them every time i grill until they are gone. the flavors blend together really well. i usually do about 5 per person for appetizers.

Google the video on deboning a whole chicken by Chef Pepin. Stuff with wild rice and beef/jalapeño sausage mix.
