I followed the guideline's for when to plant dove proso millet on some dove fields. But it looks like it is going to mature and start drying out way to early for our season in the south zone. Any suggestions on what to do?

Keep an eye on it. If it's still there by season, keep it. If it's all eaten up, till a well prepared seedbed and top sow wheat a week before. This way it's totally legal. There's no longer different wheat planting "zones" like there used to be.

I have no experience with the Proso variety but I'd be willing to bet you can still attract some birds with it by cutting and raking or burning it. Even if it falls to the ground, they won't get it all while the plant is left standing. Doves like clean, bare ground where they can see predators approaching. They also don't have feet made for scratching. If you clear the ground before the opener, they'll find the leftover seed.
