Everything from beef brisket to nanner puddin'... Scotty dropped the brisket off at my house yesterday afternoon, I carefully trimmed it all up this morning, about 2 pounds worth, Mrs. Irish rubbed it down and all on the smoker before 0600. Looking forward to tonight's eats...

For me it's like falling off a log... Trim up meat as required Start fire Season meat Put meat on the smoker Turn down fire Check on it every now and then while doing other stuff Let it rest Cut it or pull it and eat. Cave men have been doing this same thing for 10,000 years Old black men have been doing this for hundreds of years It ain't rocket science or a medical procedure with syringes and rubber gloves. It's just meat, seasoning and fire. No biggie.

I custom made the two pieces of metal straps that hold the cast iron pizza pan that I use to get the indirect heat. I just cover it in heavy duty aluminum foil to keep it from getting all nasty. On a day like today, I start the fire with a couple of alcohol soaked cotton balls while I'm seasoning the meat, and once the fire gets to going, I damp it down and she'll hold whatever temp you want pretty much all day as long as she has some charcoal.
