I've got the same kind of setup in my shop. End room has two doors and one window. I am putting in a small thru wall a/c unit and a small wall mounted electric heater. May add a dehumidifier if needed.
I've spent most of the money I've made in my lifetime on hunting and fishing. The rest I just wasted.....

I have 2 freezers in my shop and I think they help.

I have a Fridgidaire portable dehumidifier that was bought to keel my garage down in Chokoloskee dry. It has a water catch bin or garden hose drain option. I use the hose and set it for a few hours each on a separate timer and it is the read deal. Garage stays bone dry and cool in the Summer.
May we all die in bed at 95, shot by a jealous spouse

I would get a mini split I think some decent ones are down under $1k range now. You are just kinda done with it at that point.
