I just tried to cut a smoked Boston Butt....it fell apart as I tried to cut it bone just fell out. Lordy, that is a good piece of meat. Cooked uncovered for 6 hours on my offset smoker to 190 degrees, then alum covered and cooked 1 hour to 205 degrees, Rested for 1 hour on counter and then opened up. Fixin to pig out tonight....
I've spent most of the money I've made in my lifetime on hunting and fishing. The rest I just wasted.....

If you have to cut a smoked butt you did it wrong. correct 100%. I smoked one to cube up into a Chili recipe I was trying so I pulled it before I was able to shred it. Wasn't worth the effort so won't do it again but I'm sure there are situations one might want to slice one instead of pulled.

For a lil variety, next time get your butcher to cut a shoulder into 2” slices. Dress them up in seasons, like a whole chunk, and rubs, then smoke them 8hrs or until done for smoked ham steaks!
