I don't age mine at all. I process the next day myself and straight in the freezer. All mine is either ground into sausage or burger, cubed or chunked for stew beef.

I set mine on top of the ice in a cooler with the plug open to drain. It’s not getting wet, so it ain’t wet aging.

My processor hangs them to age and when I plan on butchering one myself, I keep it on ice for a few days until it is convenient to cut it up. I just couldn't get myself to trust keeping one wet for more than that. I've never really noticed a big difference if any at all.

The very best deer meat I have ever had, was a doe that a buddy of mine killed and gave me one winter when it was really cold. We had a week of temps below 40 degrees. I hung the deer on the north side of a tree, up close to the trunk, gutted it and let it hang 5 days, hide on, in the tree. I could tell when I skinned it, the meat had changed textures. It was tearing as I skinned the deer. The meat was darker and drier looking than a freshly killed deer. It was incredible. If I had access to a walk in cooler I'd let any deer that I killed hang for a week before processing. If you've never dry aged one, you have no idea what you're missing. I assure you that soaking them in ice water doesn't do the same thing.

Truth. I once had the opportunity to dry age a 190 lb buck for 10 days in a cooler. The best venison I've ever had. Butterflied the tenderloins and grilled them rare and was just as good as a beef filet.

You don't have to have a walk-in cooler, just an old refrigerator. I debone then put in ziplock bags and let it stay in the fridge for 10 to 14 days. I seriously doubt that with only a few days you could notice much of an improvement. I put mine in ziplock bags to keep the meat from drying out. I've tried the ice method but don't like it as well. I've also deboned, put in ziplocks and stored on ice until I can get it to the fridge or until I do the final processing. 10 to 14 days seems to work best for me. I'm sure I could let it age longer than that, but I don't want to risk it. When I do my final processing, I then vacuum seal and freeze it.

I'd be worried about bacteria growing inside those bags. And the outside is supposed to look "dried up" it will seal in the moisture, and look as fresh as the day it was cleaned once sliced/cut

I do what ever my processor does, because what he give me back it pretty darn good. Hell of a lot better than when I did things myself.

Has anyone had any success in building a diy walk in cooler? I have often thought about using a small shed on skids, spray foaming 6-10" in walls, floor, ceiling. Then using some kind of hvac unit. I think you would have to slope the floor to a center drain and cover everything with a type of waterproof paneling so you could wash the blood out. Just not sure of the details on what the target temp. is for hanging and if a hvac could do the job.

Everything I've read says 35ish is an ideal target temp.....basically, you want to be above freezing but absolutely no more than 40.

Worry all you want, but it doesn't happen that way. With unwrapped meat, you are creating a dried up crust that is cut off and thrown away. The meat in the bags drains but does not dry out, like unwrapped will and is still as bright and fresh as when it is put in the bags. I've done the un-wrapped and I prefer the sealed in Ziploc bags much more.. In fact, I've done it maybe 100 times without any issues whatsoever.

I wouldn't suggest something if it didn't work......

I have one I built. Framed it up spray foamed ceiling and walls. Cooled with a window unit and a coolbot. I don't age deer in it just mainly for my taxidermy.

In considering this debate I would look at how fine restaurants age their steaks. They dry age them and don't soak them in ice water. I wouldn't age it in a ziplock either. If I was going to do something like that I would wrap it in cheesecloth.
