We had friends over at the cabin and I made some of my better Gumbo. I'm diggin' our new stove. I converted it over to propane and I have it running off a set of 20# propane tanks just like you would in an RV. It works great and made on of the darker roux's I have made...

I've seen that stuff, but it eliminates the whole process of drinking beer and making it from scratch.

Lol yeah I guess it does. The last time I made a gumbo roux I stirred it for an hour and a half then when I mixed my broth it separated.. ticked me off pretty good. The broth was steaming when I added it. Idk what I did wrong

OK... So what I do is when the roux gets to looking like it does in the picture is I throw in the chopped onions, celery, bell peppers and garlic. That stops the roux from cooking and coats the veggies in it. Stir that for a minute or two, then add the beef broth, 1/4 cup of Worcester sauce, a can of chopped tomatoes, bay leaves, and the sausage and chicken.

I let all that simmer until it's really happy. Then saute the okra in bacon grease before I add it in to reduce the sliminess and then the last thing I add is the shrimp.

The meat really depends on what I have on hand. I've used just chicken, just sausage, just fish, just shrimp, or a combination of them and maybe oysters or clams too.
