I did break a cutting board in the process of pounding the meat flat. Pork is easy to put between two boards and hit the top with a hammer to flatten. That speck meat is some dense stuff. I cut each breast into thirds and then put it between the boards and my goodness it took some whacking. Next time I'll need to not use this shortcut and actually go find my meat mallet. But like the rest of my stuff it is somewhere in a storage unit.

My grandmother use to cook schnitzel and would run the pork or steak through a cuber was sone more good!
