Boy and I have been wanting some jambalaya. Turns out the girls loved it too and it was tasty.
6 Chicken thighs,1lb conecuh, pinion, peppers, garlic. Brown sausage and pull. Drain fat from pan. Brown Chx and veggies. Drop sausage back in and add 4 cups chx broth and 2 .5 cups water. Boil. Drop in rice. Stir occasionally until water drops to rice level. Simmer with top on for 20-25 minutes. Open and fold rice over 2-3 times. Return top turn off burner and let sit 10-15 minutes. I used salt pepper thyme Tony’s paprika and a little bit of kitchen bouquet.

One ingredient that we found makes a big difference is adding a lot of fresh chopped parsley to jambalaya.

This is my cousin’s recipe so credit him for that. I sweated it a little but what he has found is the chx stock makes the difference in flavor vs water
