technically we grill them, not "smoke" them, but I like to do a dry rub that's a mix of Pilleteri's Original seasoning and Southern Flavor charbroil seasoning

We inject ours with creole butter marinade, then some Tony Chachere's dry rub on the outside. . Smoke two hrs at 225, indirect heat

I use a Weber kettle for wings. Put coals in the center and cook the wings indirect heat at 400 degrees about an hour to a hour and a half. Pro tip roast some garlic with the wings and use it in your hot sauce.

I did some in the masterbuilt last week. Soaked them in salt water for 4 hours then sprinkled them with a bbq rub. Temp set at 250 for 2-2 1/2 hrs or 165 degrees. Dipped into Moore’s honey bbq wing sauce

Brine them in saltwater, garlic powder, onion powder, cayenne pepper and whatever other spices you might like. I brine mine over night. Then dump out brine and rinse off. Season up however you like. If you want hot, mix up cayenne pepper, black pepper, chipotle powder, and garlic powder. Toss em in that, and smoke for 2-2.5 hours at 225

We did some wings last night. I marinated them in some Pete’s Meats marinade, put them on the Primo at 375 indirect and sprinkled them with Cavender’s. Moved them over the fire to crisp when they were done.

Badia Mojo Criollo marinade. Grapefruit/orange based with garlic, onion, etc in the marinade, already. Outstanding!
