Wife decided to fix étouffée for thanksgiving, but substituted lobster for the crawfish or shrimp. Pretty dang good too....

I have never made étouffée. That sounds good with the lobster. I'm going to have to read up on making it.

Was going to make crawfish etoufee last weekend but Publix didn't have any crawfish.
