4 power plants in 4 days and a detour to pick up a motorcycle project and I finally made it back to God's country at 2100 last night. Mrs. Irish had made homemade Kafta kebobs, Greek rice, a nice Greek salad, homemade Taziki sauce and some warm pita bread all coming off the grill. And here I thought she was mostly Irish and Cherokee, but I need to check here ancestor to see if she ain't got some Greek down the line somewhere. I am a lucky guy...

Yeah we gonna need some recipes on this one! Especially that homemade taziki.

Yep, especially the Taziki. Have tried and tried before and it never works out quite right. Too runny, too tangy, not enough dill, etc.

It all looks AWESOME!

OK... So this is Mrs. Irish:

Heeey! wink

Taziki's Sauce:
2 cups plain Greek yogurt (I used full fat)
5 cloves of fresh minced garlic
1 English Cucumber (3/4 of the cucumber, shredded, salted and SQUEEZED and SQUEEZED, holds crazy amount of water)
1 tbsp. EVOO (Extra Virgin Olive Oli)
1 tsp salt
1 tsp white pepper (I didn't have white, showed diversity and used black)
1 tsp white vinegar

Shred cucumber and salt and mix and allow salt to draw liquid out while combining the remaining ingredients. Add cucumber and mix well. This is a great sauce for Greek grilled chicken and meats and also for chips and veggies. Obviously very healthy. Keeps for about a week. Enjoy!
