Shepard's Pie...

Shepard's Pie... - 06/25/20 09:25 AM

I had to go get a new windshield in the Jeep yesterday afternoon over in Rainsville. When I got back Mrs. Irish was already working on dinner. So I mixed a martini, fired up a Cuban, sat out on the covered deck and enjoyed the rain. It was nice.

She took some grass fed beef, browned it in the skillet and added:

Chopped onion
Chopped garlic
Chopped bell pepper
Salt
Pepper
Worcestershire

Let all that cook together for a little bit and added:

Frozen peas

Then she sprinkled some Parmesan cheese on the meat and mixed up some leftover mashed potatoes an egg and some flour and topped the whole skillet with that and baked it for about 20-30 minutes. She pulled it out and topped the whole thing with shredded seriously sharp cheddar and baked it until the cheddar got right.

Oh my that looks good.
Add in some thin sliced Conecuh sausage and see what happens.

I love Conecuh, but not in this. This was spot on just like it was.

It is. We love sitting out here. I'm sitting out here typing this and having my coffee this morning. It's the reason we worked every weekend for 3 years building this place.

Looks good! Fun fact. That's Keith Richards' favorite dish.
