Cald?

Have any of y’all ever cooked cald? If so, how was it? I’ve heard mixed reviews and was just wondering if there was a preferred way to prepare it. I’ve seen a few calds but I don’t know if they’re any good eatin. Thanks

Chicken/coon fried.

Needs salt.

Best wrapped in bacon

Italalin dressing is the only way!

Gotta soak it in an ice chest for at least 3 weeks to get the gamey taste out.

Cald Fricassee

Brown cald pieces until golden and remove them to a separate plate.
Than in the same pan, sautee onions, carrots, garlic and your choice of herbs.
Next you need to thicken the sauce by adding flour and quickly cooking it until it’s mixed with the butter and smells slightly nutty.
Add white wine and mix with a wooden spoon until you have a thick sauce.
Return the browned cald with the juices back to the pan and cook in the oven uncovered for 45 minutes.

Pressure cooker or crock pot. Use lots of onion

The girlfriend takes the CALDS and slowly Neads them.....then she takes a-hold of the Skillet Handle and gets things a Cookin'!!

Tastes like chit. Tried bacon wrapped, battered and fried, then smothered in gravy. If that don't make it good, it's buzzard feed.
