She makes these all the time. This time it was Saturday morning. They are great, because you cut them into squares and can take them for breakfasts at work during the week.

Usually they consist of something like this:

Meat
Potatoes
Eggs
Veggies
Cheese

This one had:

Diced smoked ham
Frozen hash browns
Diced onions
Diced bell pepper
Fresh spinach
Diced tomatoes
Shredded Cheddar cheese
8 eggs and half and half
Salt and pepper

Preheat oven to 350.
Spray a casserole dish. Put the potatoes in the bottom and then layer all the meat and veggies. Then pour over all the scrambled eggs and cream. Season and then sprinkle all the cheese on the top.

Bake for about 30 minutes. Let slightly cool and eat...
