I got home early yesterday and after lifting weights and finishing the last corner of my Jeep suspension, I was hungry. So I dug around and found enough stuff to make a jambalaya out of and called and invited my old man over for dinner with Mrs. Irish and I. Jambalaya is always a winner and it's about as quick to fix as anything I can whip up.

Conecuh Hickory smoked sausage
Previously cooked chicken breast
Gulf shrimp
onion
bell pepper
celery
tomatoes
fresh garlic
my own cajun seasoning blend
parsley
salt
pepper
Bay leaves
Chicken stock
File gumbo


Garnished with a little chopped green onion and cayenne pepper and served with some buttered and grilled French bread. I serve it over parboiled rice.

Looks really good. What amazes me though, is that you could 'dig around' and come up with all that stuff. My fridge contains milk, eggs and a few assorted condiments. grin

Looks good. But, that is too liquid to be jambalaya and jambalaya has the rice cooked in it, it isn’t served over it.

I agree and agree. This was a quick version that we make, and we don't mix the rice in because we take the left overs for lunch and the rice gets all gummy if it's all mixed together. So we keep them seperate until we eat it.

In keeping with Louisiana tradition...With File' and bay leaves and served OVER rice that's way more like sausage, shrimp and chicken gumbo....jambalaya got to absorb the juice and unless you use parboiled rice is very subject to being gummy..you are correct.

Sure looks like some tasty gumbalaya!
