Taco Sunday

Yesterday I marinated some thin cut ribeyes and chicken strips for tacos. I made some pico with jalapenos and tomatoes from my garden. I made some homemade green salsa that was very good and a cilantro and jalapeno slaw that was to die for. I got in the cooler before the meat was done so I forgot to take pictures. grin Click on the links below for pics.

I pretty much mixed a few Carne Asada recipes I found on the web. I used some soy sauce, olive oil, a couple of chopped garlic cloves, the juice from one lemon, one orange, one lime, some chopped fresh cilantro, a diced jalapeno, some cumin, kosher salt and black pepper. I try to do a 2:1 soy sauce to olive mix. I'll add some beer to but I was out the morning I mixed the marinade up. Google Carne Asada marinade recipe and kind of see what you think tastes good. The one I made sure did smell good.

We do it like a family style meal. We get the grill going and set up a table with all the fixings over on the side. Each person grabs a piece of steak and throws it on. Then throw a couple tortillas on. Pull the meat and tortillas off and go fix your taco at the table. We stand around and eat and drink beer until you are full.
