How much meat on avg doe shoulder - 11/17/17 10:33 AM

found a recipe for venison barbacoa tacos, calls for 2-3 lbs of meat from shoulder/hindquarter (bone-in is fine). Roughly how much would you expect the shoulder off an average size doe to be? I've never butchered my own, so I don't really have any reference...

here's the recipe I intend to try whenever I lay one down, in case anyone is interested.

Front shoulder if you don't destroy it, maybe 3-4lbs?

You mean how big a single muscle group roast off front quarter? Hard to get one more than 2-3 lbs off the average doe, but you could use several smaller pieces?

Maybe 2-3 lbs sounds bout right, I only use it as hash or stew meat for crock pot recipes.
