Check my shredded beef post a few days ago.

Another favorite is 4 chicken breasts, packet of fajita seasoning and 1 cup of water. Low for 6 hours and then add half a pack of cream cheese and cook until smooth. eat with rice or tortillas.

Google Mississippi roast.

One of the easiest things to cook in a crock pot would be beans and ham...generally I use Northern Beans and ham cubed. Add a diced onion or two, spices, water and cook on high for several hours and Bob's your uncle!! I generally use a pkg of chicken broth in ANYTHING I cook for a long time..low sodium if available...just gives it a better flavor. If it is beef, I use beef broth.

Take a boston butt. Rub it down with chili powder, cumin, garlic powder, salt, pepper and a little bit of red pepper flakes and a few drops of liquid smoke. Put it in a crock pot all day on low.

When you get home make some of Mrs. Irish's cilantro lime slaw and put it in the fridge.

Next take some flour or corn tortillas (I like Corn best) and lightly toast them in a little oil in a cast iron skillet and then stack them on a plate as they get done to keep them warm.

Shred the pork and put it on the tortillas, put on the slaw and drizzle with some Valentina Mexican hot sauce and eat about 10 of them.

Yep.....short version, just google "Mississippi Pot Roast". We cut back a little bit on how much butter it calls for (I think it called for 1 stick, so we used like 2/3 or 3/4 of a stick) but otherwise follow the recipe pretty much verbatim. We also have substituted chicken breast/tenders for the pot roast, then shredded it with a fork and put it on hamburger buns like a pot roast sandwich. damn good eats
