We had about 3 smoked chicken thighs from last weekend so Mrs. Irish pulled all that smoked goodness off the bone and chopped it. I chopped a Vidalia onion, a couple of jalapeno peppers, a red bell pepper, a few celery stalks, the biggest damn garlic clove you've ever seen, a pound of Conecuh sausage sliced and a pound of fresh frozen Gulf shrimp. I also used 2 quarts of home canned chicken broth and 2 cups of Jasmine rice. Simply seasoned with parsley, bay leaf, and Tony Chachere.
Yes my friends... It was good. I somehow managed to wash it down some Guatemalan beers injected with lime and some Sauza tequila, which was also consumed during the making of this dinner. Carlos Santana was on the record player in honor of Cinco de Mayo.
