Look up Joe Elder. I was planning on hunting with him last year, but my work schedule changed and I had to cancel the trip. He's got access to different ranches over around Uvalde. I believe his website is eldorado.net

Get on Texashuntingforum.com Its the ALdeer of Texas. They have a outfitter and guide forum. Lots of hunts available. I've used it twice and met good people and great hunts off it.
