How do most of yall get a hog processed? What are the standard cuts and sausage/whatever most processors offer? I would imagine everyone would get the loins cut into chops, and a fair amount of breakfast sausage added in for all the trimmings, neck meat, lesser quality cuts. What do you specifically ask for to be done for hams versus shoulders?
