I was out in Clay County today and I saw a young buck sniffing on a doe. Could this be an indication of an early rut?

No.
Bout time for velvet shedding and testosterone rising. Think of the line in Chattahoochee, "I was willin' but she wasn't ready."

It is actually a sign of a late rut. He was still going at it from last season.

There will be a slight spike in testostereone that triggers antler hardening/velvet shedding. I noticed a bunch of fresh scrapes and some light rubbing this past Thursday while filling my feeders.
