I was reading through some of the comments on that video and someone (maybe the video's poster) mentioned something about the meat being mushy if not cleaned alive. For what it's worth, it looked like the dude smacked the thing in the head with a hammer but they edited it out. So all the squirming was likely just nerves. I'm guessing they just want to keep them alive up until the moment they clean them, then they club it like a baby seal.

if my fish are alive when I get home that's how they get cleaned.

The only way I've ever eaten it was in a pattie and fried. They mixed onions, bell pepper, celery and potatoes and lots of seasoning. It was bad.

Had a pair of Louisiana dwellers yesterday.
We caught a jack took a pic threw it back. She says can you eat it? I said no and throw him back. Why not? Not big enough...
